Exclusive Dinning Tasting Menu: A Tribute to Columbia’s Pacific Cuisine

On September 26, 2024, Flames present a dinner tasting menu curated by Chef Alex Nessim, showcasing the vibrant flavors of Columbia with a contemporary twist:

The Dinner Menu includes:

  • Pulpo del Pacifico – Shizuwaga octopus confit with annatto oil and sourdough bread
  • Tartar de Gambas – Lightly-cooked shrimp with cassava texture and tamarind “aguachile”
  • Pescado a la Parrilla – Josper-grilled barramundi with rooftop herb butter
  • Pato Al Jerez – Pan-roasted duck magret with white chocolate brioche and seared foie gras
  • Crema de Cafe – Columbian coffee creme brulee

CHEF ALEX NESSIM : A Pioneer of Sustainability of Columbian Cuisine

He is culinary force known for his advocacy of sustainable fishing practices, specifically along Columbia’s Pacific coast. A graduate of Le Cordon Blue University in Lima, Peru, Chef Alex trained under culinary master such as Rafael Osterling and Toshiro. His Cali-based restaurants, Pica Restaurante and selfish bar, showcase his fusion of local flavors and modern techniques.

In 2015 Chel Aelex founded Pescando Pacifico, a collaborative project promoting eco-friendly fishing practices while preserving unique culinary heritage of the region.

Merienda with Media : A Taste of Columbia

Ahead of the dinner, Chef Alex hosted a merienda at Flames yesterday September 25, 2024, offering a preview of his Columbian creations. Culinary enthusiasts and ,edia experienced a demonstration of classis Columbian dishes like Patacones con Ceviche and Encocado de Congrejo.
